Section 25-A3714. CONDITIONS OF RETENTION - RESPONSIBILITIES OF DEPOT, COMMISSARY OR SERVICE SUPPORT FACILITY

3714.1A depot, commissary, or service support facility servicing mobile food units with Class A Vending Business Licenses shall provide the following services to a vendor:
(a)Storage of the mobile food unit;
(b)Food preparation;
(c)Basic maintenance and cleaning; and
(d)Proper disposal of trash and food waste.
3714.2Such a facility shall comply with all applicable provisions of this Code, including but not limited to:
(a)Section 712, Specifications for Receiving ─ Ice; P
(b)Section 817, Preventing Contamination from the Premises ─ Food Storage, Prohibited Areas;
(c)Chapter 4, Personal Cleanliness of Food Employees; and
(d)Chapter 34, Operational Supplies and Applications of Poisonous or Toxic Materials.
3714.3The operator of a depot, commissary or service support facility that services a mobile food unit shall maintain a ledger that includes current information on the name, license number, and address of each food vendor and supplier doing business with the vendor. This ledger shall be made available during regular business hours for inspection by any duly authorized representative of the Department.
