Section 25-B2505. HACCP PLAN - TRAINING

    2505.1At a minimum, the following functions shall be performed by an individual who has successfully completed training in the application of HACCP principles to shellfish processing:

     

    (a)Development of a HACCP Plan, which may include adapting a model or generic-type HACCP plan that is appropriate for a specific shellfish operation, in order to meet the requirements of section 2501.1;

     

    (b)Reassessment and modification of the HACCP plan in accordance with the corrective action procedures specified in section 2502.2(e) and the verification activities specified in section 2503.1(a);

     

    (c)Performance of the record review required by sections 2502.2(b) and 2503.1(c).

     

    2505.2An individual who performs the functions described in section 2505.1 shall provide the Department, upon request, with a copy of their certificate of completion of training for the application of HACCP principles for shellfish processing.

     

    2505.3Job experience may qualify an individual to perform the functions specified in section 2505.1. The individual performing these functions need not be an employee of the dealer.
