405.1All persons working in direct contact with food, equipment, utensils, food- contact surfaces, or food-packaging materials shall keep their fingernails trimmed, filed, and maintained so that the edges and surfaces are cleanable and not rough.
405.2Unless wearing intact gloves in good repair, a food employee may not wear fingernail polish or artificial fingernails when working with exposed food, equipment, utensils, food-contact surfaces, or food-packaging materials.
